Borealis Breads

Now the largest Maine-based baking operation, founder of Borealis Breads Jim Amaral set out to prove that our state’s artisanal breads can be truly great! Originally from Massachusetts, Jim first came to Maine as a student at Bates. After graduation, he traveled to Seattle to learn about sourdough baking from the West coast OGs, eventually returning to Waldoboro in 1993 to found Borealis Breads! Starting in the basement of a friend’s restaurant, Borealis Breads has now grown to two production locations and you can even find their loaves sliced and ready to go at your local Hannafords!


Borealis Breads’ claim to fame is their uniquely Maine partnership with a great farm up in Aroostook County: Aurora Mills & Farm. Like many spaces up north, Aurora Mills used to be a potato farm, but owner Matthew Williams decided to transform the facility into a whole wheat growing and milling operation! A large motivator for Matthew to kick the milling operation into high gear was the increased demand from Borealis, and Aurora Mills remains one of Borealis’ primary suppliers of local ingredients to this day!


So grab a slice of Maine for yourself! Borealis makes their products easily accessible at many local New England supermarkets, but you can also visit their bakeries in Wells and Waldoboro. Rise to the occasion!
